It must be said that, as a graduate of the hotel school in Namur, Belgium, he loved to revisit traditional Burgundian dishes, creating generous yet refined dishes that he treated us to over the years. Today, it is with undisguised happiness that Guillaume continues to cultivate his love of cooking at Babam, where he assists chef Thibaut in Watermael-Boisfort (Brussels).
Thibaut van Outryve, a talented chef with a generous heart, has left his mark in the Michelin-starred kitchens of Paris and Brussels. With his experience as sous-chef at Mallory Gabsi’s Michelin-starred restaurant in Paris, where he helped earn a Michelin star, as well as his role as Chef de Partie at Yves Mattagne’s Sea Grill, Thibaut has since created his own culinary universe by launching his beloved restaurant, Babam, which was awarded the title of ‘Discovery of the Year 2025’ by Gault & Millau and a ‘Bib Gourmand 2025’ by the Michelin Guide!
Thibaut is also a knowledgeable connoisseur of fine Burgundy wines. As in his cooking, he boldly combines modernity with tradition and has entrusted us with the ageing of his Fixin in a new barrel and his Rully 1er Cru Vauvry in a Wineglobe.
